The Indian Oven ?›ƒ?ªƒ?? A Culinary Experience

Raised in the great plains of Northern India, Ash Oberoi discovered a passion for cooking at an early age in his mother’s kitchen. The complexity and diversity of spices encouraged him to learn more and he furthered his hobby by helping with the family catering business, before life took him on the worldwide journey that lead him to America.

Ash worked as a sailor on cargo ships and his employment onboard gave him the opportunity to travel to 47 different countries, experiencing their cultures, and learning to cook their foods. The experiences and influences of those diverse cultures inspired him to pursue a culinary career and Ash became a master of Greek, Italian, American and Chinese cuisines.

Ash opened his first restaurant in 1989 in Salt Lake City, which allowed him to demonstrate his extraordinary skills. When he moved to Cache Valley in 1990, he noticed a resemblance between the valley and where he grew up in India. ?›ƒ?ª?The mountains are similar,?›ƒ?ª? he said. ?›ƒ?ª?Even the trees look so similar.?›ƒ?ª? It was probably under this influence that Ash began a journey back toward his culinary roots.

Ash owned and operated several restaurants in the valley. ?›ƒ?ª?I did pizza, I did American cuisine, I did Greek. Then I said, ?›ƒ?ª??why not do Indian food? It?›ƒ?ªƒ?›s in my blood.?›ƒ?ª? So, Ash made the decision to open an Indian restaurant where he could share the aromatic cuisine of his homeland with the residents of the Cache Valley.

The Indian Oven is the result, with full-service casual dining and a wide range of menu choices, affordability and atmosphere. Ash teamed up with Sous Chef Mukhtiar Singh (whose family owns Salt Lake?›ƒ?ªƒ?›s Bombay House) an excellent Indian fare in northern Utah.

The all-you-can-eat lunch buffet is popular with hungry Utah State students and downtown workers alike. The atmosphere is warm and friendly and top-flight dishes include lamb biryani made with tender lamb chunks, onions, garlic, ginger, cashews, raisins, spices and basmati rice. Also excellent is shrimp saag, with plump, tender shrimp cooked in cream with ginger, garlic, onions and spinach. Although, many of their regular patrons who travel regularly, report that The Indian Oven?›ƒ?ªƒ?›s Tikka Masala, a chicken or lamb curry dish, is the best they have ever had.

The Indian Oven also encourages members of the community to bring the Indian culture into their homes. As part of that encouragement, Ash conducts cooking lessons at Kitchen Kneads of Logan, every other month. ?›ƒ?ª?We cook the food over there live. Whatever food is cooked is served to the people taking the classes. They enjoy it,?›ƒ?ª? Ash says with pride, ?›ƒ?ª?Every time we do the cooking class it is full. It makes us feel good that people in Cache Valley love to learn ?›ƒ?ª?? how to cook the cuisine.?›ƒ?ª?

Because some customers are fearful of spicy entrees, Ash and his staff work to alter spice content according to individual preference and they give their best efforts during operating hours to make it mild. ?›ƒ?ª?We Americanize it,?›ƒ?ª? Ash says, ?›ƒ?ª?so that everybody can try it.?›ƒ?ª?
