The place is Torrey, Utah. If you haven’t been there, you are not alone. There are only about 200 people that live in this town that borders the Capital Reef National Monument. With only 3-4 motels in the area, you will be guaranteed that there will not be hoards of people.
However, with this being in such a remote area, it does entice an ecclectic group of residents and travelers. One of these residents, Chef Gary Pankow, opened the Cafe Diablo located on the western entrance to Torrey, Utah. My wife and I decided that on one of the early summer evenings that we were in Torrey, we would visit and enjoy a relaxing dinner.
We were not disappointed. The area is located in the Red Rock Country of southern Utah and is very much in the high- desert. There was a large crowd on this evening. After we were seated at our table, we had an opportunity to view the menu offerings. The choices ranged from a Turkey Relleno to Salmon to Steak and Lamb.
I decided on the Marinated Loin of Utah Lamb along with the Citrus Salad. The ingredients are organic, either grown outside the restaurant (fresh herbs), or in a town not too far away (Cainesville.)
The Citrus Salad was flavorful and refreshing. The salad was a great beginning for a summer meal. This is a restaurant that prepares quality with modest servings. It is an experience. When the marinated lamb arrived, it smelled delicious and looked delicious. With the first tender bite, it was a meal to be remembered for the flavor and presentation.
Who would of thought that in Torrey, Utah, you could find a restaurant that would rival any that you might find in Vail, Jackson or Park City?
Torrey is off the beaten path. In fact, it is a realistic four hour drive from Salt Lake City, Utah, or five hours from Las Vegas, Nevada (the two closest major airports.) Once you arrive in Torrey, Utah you are bound to notice the lack of activities. With a couple of small stores and a few restaurants, the evenings are made to relax and reflect on the day.
Cafe Diablo is open April through October. The hours are 5:00 p.m. to 10:00 p.m., seven days a week. Cafe Diablo is located on Utah Highway 24 on the west entrance to Torrey, Utah. (www.cafediablo.net
