Bishops Lodge plants Heirloom Garden to provide fresh fruits and vegetables to Las Fuentes Restauran

Bishop????????s Lodge Ranch Resort & Spa announces new Heirloom Garden to provide fresh foods and vegetables to their Las Fuentes Restaurant, which offers a variety of award-winning cuisine prepared by their celebrated culinary team. Chef McLean, who has worked with top chefs around the world, is working to expand his personal mark upon the restaurant by serving foods from the Heirloom garden, planted on site. Heirloom Gardens refer to gardens planted with seeds that are not altered genetically or cross-bred as well it refers to items that were commonly grown during earlier periods in history, and which is no used in modern large-scale agriculture. Another trait of Heirloom Garden is taste and quality. This Bishops Lodge garden will yield fresh fruits and vegetables whose flavor, texture, and quality is unsurpassed when compared to today????????s produce.

The following will be planted and included in Chef McLean????????s culinary creations:

Crookneck Squash
Yellow Perfection Tomato
Tigerella Tomato

The heirloom produce will be incorporated into the sophisticated and unique dishes that define the restaurants Nuevo Rachero style menu, which includes dishes such as Sweet Corn Crusted Beer Belly Quail and Pistachio Blue Salad, as designed by celebrated Chef McLean.

Since the late 1800s, history has documented Bishop Jean Baptiste Lamy????????s, the first bishop sent by the Vatican to the New Mexico area, horticultural accomplishments as well as his civic accomplishments, including the gardens at his weekend retreat, the Villa Pintoresca — what is now Bishops Lodge. Archbishop Lamy would have most certainly planted similar plants in his gardens. He planted orchards of apricot, apple, peach, and pear trees.

Bishops Lodge is looking to carry on the vast accomplishments of its namesake by continuing his heirloom garden while providing healthy and fresh vegetables to their restaurant.

About Executive Chef Christopher McLean:

Texan by birth, Chef McLean????????s work has taken him across the globe, most recently West Africa, where he was the Executive Chef of Golden Tulip, a large Dutch hotel in Accra, Ghana. He cooked for royalty and heads of state on a regular basis, including private dinners for the President of Switzerland, President of Ghana, Prime Minister of Italy, and the Princess of Thailand. Chef McLean also catered the Presidential Box at the African Cup of Nations, created events for many leaders at the African Union Summit, and was the first Sommelier and Chef in Ghana to hold wine and food pairings at the Presidential Palace. Chef McLean was also a coach on the first ever Ghanaian National Culinary Team and worked with the Ghanaian Ministers of Health and Tourism to help modernize healthy food service throughout the country. During his time abroad, he also cooked in the Netherlands and led the culinary team for the grand opening of the Golden Tulip Hamburg Aviation in Hamburg, Germany. Prior to his time abroad, Chef McLean was awarded the title of ??????Certified Sommelier?????? by the Court of Master Sommeliers, American Chapter.

Chef McLean also spent a great deal of time in Napa Valley working with the top chefs in the area. He worked for Thomas Keller at both Bouchon and The French Laundry. He also studied under Richard Reddington, a former pupil of Daniel Boulud, at Auberge du Soleil. During a six year span, Chef McLean traveled each year to the Masters of Food and Wine in Carmel, CA, as a form of continuing education, working with top chefs in the industry, including: Eric Ripert of La Bernardin in New York, Gordon Ramsey, and Susur Lee, of Susur in Toronto, among others. Chef McLean also had the opportunity to cook with Julia Child and was part of the culinary team to serve Julia on her 90th birthday.
